- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup pistachio pudding mix
- 1/2 cup chopped pistachios
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and pistachio pudding mix.
- Gradually add the dry mixture to the wet mixture until combined.
- Fold in the chopped pistachios and white chocolate chips.
- Spread the batter evenly in the prepared baking pan.
- Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool before cutting into squares.
Notes
- For a more intense pistachio flavor, add more chopped pistachios.
- These bars can be stored in an airtight container for up to one week.
