A tropical twist on the classic tiramisu, infused with coconut and rum.

Ingredients

  • 1 cup coconut cream
  • 1 cup mascarpone cheese
  • 1/2 cup sugar
  • 1 cup strong brewed coffee, cooled
  • 1/4 cup dark rum
  • 24 ladyfinger cookies
  • 1/2 cup toasted coconut flakes

Instructions

  1. In a bowl, combine coconut cream, mascarpone cheese, and sugar until smooth.
  2. In another bowl, mix coffee and dark rum.
  3. Dip the ladyfinger cookies into the coffee mixture briefly.
  4. Layer half of the ladyfingers in a dish, followed by half of the coconut mixture.
  5. Repeat the layers and top with toasted coconut flakes.
  6. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a non-alcoholic version, omit the rum or substitute with coconut extract.
  • Make sure to use unsweetened coconut cream for the best flavor.
