- 4 fillets cod
- 1 can coconut milk
- 1 inch ginger, sliced
- 2 limes, juiced
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1/4 cup fresh cilantro, chopped
Instructions
- In a saucepan, combine coconut milk, ginger, lime juice, garlic, fish sauce, and brown sugar.
- Bring to a simmer over medium heat.
- Add cod fillets and poach for 12-15 minutes until cooked through.
- Serve with chopped cilantro on top.
Notes
- Adjust the lime juice to taste for more or less acidity.
- Serve with rice or vegetables for a complete meal.
