  • 1 cup dried green or brown lentils, rinsed and drained
  • 1 ½ cups water
  • 1 tablespoon coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 large egg
  • ½ cup breadcrumbs (or gluten-free breadcrumbs)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Coconut oil for frying

Instructions

  1. In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until lentils are tender. Drain any excess water and let cool slightly.
  2. In a skillet, heat coconut oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in garlic and ginger, cooking for an additional 1-2 minutes.
  3. Add curry powder, cumin, coriander, turmeric, salt, and pepper. Cook for another minute until fragrant.
  4. In a large bowl, combine the cooked lentils, sautéed onion mixture, shredded coconut, egg, breadcrumbs, and cilantro (if using). Mix until well combined.
  5. Form the mixture into patties, about 2-3 inches in diameter.
  6. In a large skillet, heat coconut oil over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy. You may need to do this in batches.
  7. Remove patties from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  8. Serve warm with a side of yogurt or chutney for dipping.

Notes

  • For a spicier kick, add chopped jalapeños or red pepper flakes to the mixture.
  • For a vegan option, replace the egg with a flaxseed egg (1 tablespoon flaxseed meal mixed with 2.5 tablespoons water, let sit for 5 minutes).
