Delicious mini cheesecakes decorated to look like festive Christmas trees.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup green food coloring
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of the muffin liners.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing well.
  4. Add eggs one at a time, mixing until just combined. Fold in green food coloring until the desired color is achieved.
  5. Pour the cream cheese mixture over the crust in the muffin tins.
  6. Bake for 15-18 minutes, or until set. Remove from the oven and let cool completely.
  7. Once cooled, add whipped cream on top to resemble snow.

Notes

  • For easier removal, chill the cheesecakes overnight.
  • Decorate with festive sprinkles for added fun!
