Ingredients

  • 1 cup unsalted butter, chilled and cubed

  • 1/4 cup sugar
  • 6 tablespoons ice water
  • 2 cups mixed berries
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix flour, salt, and sugar.
  3. Add chilled butter and mix until crumbly.
  4. Stir in ice water until dough forms.
  5. Roll out the dough and place it in a pie dish.
  6. In another bowl, combine berries, sugar, cornstarch, cinnamon, and lemon juice.
  7. Pour the berry mixture into the pie crust.
  8. Cover with remaining dough and seal the edges.
  9. Brush with beaten egg.
  10. Bake for 45 minutes or until golden brown.
