  • 3 cups grated carrots

  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add oil and eggs to the dry ingredients and mix until combined.
  4. Stir in grated carrots, crushed pineapple, and walnuts (if using).
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
  8. For the frosting, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until well combined.
  9. Frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
  10. Decorate with additional walnuts or carrots as desired.
