- 2 cups grated carrots
- 1 cup crushed pineapple, drained

- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour

- 1 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the grated carrots, crushed pineapple, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts if using.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Frost with cream cheese frosting once cooled.
Notes
- For a festive touch, add coconut flakes on top of the frosting.
- This cake tastes even better the next day as the flavors meld together.
