- 2 pounds codfish
- 1 cup olive oil
- 4 cloves garlic, minced
- 1 onion, diced
- 1 cup parsley, chopped
- 1 lemon, juiced

- 1 teaspoon salt
Instructions
- Soak the codfish in cold water for 24 hours, changing the water several times.
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil and sauté garlic and onion until translucent.
- Add the soaked codfish and cook until it flakes easily.
- Stir in parsley, lemon juice, black pepper, and salt.
- Transfer the mixture to a baking dish and bake for 20 minutes.
- Serve hot, garnished with additional parsley if desired.
Notes
- For added flavor, let the codfish marinate in the olive oil mixture overnight.
- Serve with crusty bread for a complete meal.
