  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk
  • 1 cup boiling water
  • 1 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In another bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture alternately with the buttermilk.
  6. Stir in the boiling water and the chopped pistachios until well combined.
  7. Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  9. Frost as desired and serve.
