- 1 pre-made pie crust (or homemade)
- 2 tablespoons extra virgin olive oil
- 2 large onions, sliced thinly
- 1 teaspoon brown sugar
- 1/2 teaspoon sea salt
- 4 large eggs
- 1 cup whole milk
- 1 cup fresh spinach, roughly chopped
- 1 cup crumbled feta cheese
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 375°F.
- If using a store-bought crust, place it into a 9-inch tart pan and pierce the bottom with a fork. Bake the crust for 10 minutes, then allow it to cool.
- In a large frying pan, warm the olive oil over medium heat. Add the sliced onions, brown sugar, and sea salt. Sauté for 20-25 minutes until soft and caramelized.
- Remove the onions from heat and let them cool for a few moments.
- In a large bowl, beat the eggs and milk together until smooth. Mix in the chopped spinach and crumbled feta cheese.
- Gently fold the cooled onions into the egg mixture.
- Transfer the filling into the cooled pie crust. Optionally, sprinkle grated Parmesan cheese on top.
- Bake the tart for 30-35 minutes, or until the filling is firm and the top is golden brown.
- Allow the tart to rest for about 10 minutes before slicing into wedges. Enjoy warm or at room temperature.
