A savory delight featuring caramelised onions, feta cheese, and spinach in a delicious quiche.

Ingredients

  • 1 pre-made pie crust (or homemade)
  • 2 tablespoons extra virgin olive oil
  • 2 large onions, sliced thinly
  • 1 teaspoon brown sugar
  • 1/2 teaspoon sea salt
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup fresh spinach, roughly chopped
  • 1 cup crumbled feta cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. If using a store-bought crust, place it into a 9-inch tart pan and pierce the bottom with a fork. Bake the crust for 10 minutes, then allow it to cool.
  3. In a large frying pan, warm the olive oil over medium heat. Add the sliced onions, brown sugar, and sea salt. Sauté for 20-25 minutes until soft and caramelized.
  4. Remove the onions from heat and let them cool for a few moments.
  5. In a large bowl, beat the eggs and milk together until smooth. Mix in the chopped spinach and crumbled feta cheese.
  6. Gently fold the cooled onions into the egg mixture.
  7. Transfer the filling into the cooled pie crust. Optionally, sprinkle grated Parmesan cheese on top.
  8. Bake the tart for 30-35 minutes, or until the filling is firm and the top is golden brown.
  9. Allow the tart to rest for about 10 minutes before slicing into wedges. Enjoy warm or at room temperature.
