Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/2 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, and black pepper.
  3. In another bowl, combine milk, eggs, and olive oil.
  4. Mix wet ingredients into the dry ingredients until just combined.
  5. Fold in cherry tomatoes, mozzarella, and basil.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let cool before slicing and serving.
