A sweet treat made from lemon peels, perfect for adding to desserts or enjoying on their own.

Ingredients

  • 4 large lemons
  • 2 cups granulated sugar
  • 2 cups water

Instructions

  1. Wash the lemons thoroughly and cut them into quarters.
  2. Remove the flesh and pith to leave just the peels.
  3. Boil the peels in a pot of water for 10 minutes, then drain.
  4. Mix 2 cups of water and 2 cups of sugar in the pot and bring to a boil.
  5. Add the lemon peels to the syrup and simmer for about an hour.
  6. Remove the peels from the syrup and let them cool on a wire rack.
  7. Once dry, roll the peels in sugar to coat.

Notes

  • Store in an airtight container for up to 2 weeks.
  • Try adding to baked goods for extra flavor.
