Ingredients
Scale
- 4 large lemons
- 2 cups granulated sugar
- 2 cups water
Instructions
- Wash the lemons thoroughly and cut them into quarters.
- Remove the flesh and pith to leave just the peels.
- Boil the peels in a pot of water for 10 minutes, then drain.
- Mix 2 cups of water and 2 cups of sugar in the pot and bring to a boil.
- Add the lemon peels to the syrup and simmer for about an hour.
- Remove the peels from the syrup and let them cool on a wire rack.
- Once dry, roll the peels in sugar to coat.
Notes
- Store in an airtight container for up to 2 weeks.
- Try adding to baked goods for extra flavor.
