Ingredients

  • 4 mackerel fillets (approximately 6 ounces each)
  • 1 tablespoon extra virgin olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 1 lemon, for zest and juice
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, finely chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to broil and line a baking sheet with parchment paper.
  2. Arrange the mackerel fillets on the lined baking sheet, skin side down. Lightly coat with olive oil and season with sea salt and black pepper.
  3. Broil the mackerel for about 5-7 minutes, or until the fish is opaque and the skin is crispy.
  4. While the mackerel is broiling, melt the butter in a small saucepan over medium heat.
  5. Add the chopped garlic to the melted butter and sauté for about a minute.
  6. Incorporate the lemon juice and zest, stirring well, and let it simmer for another minute.
  7. Remove from heat and fold in the chopped parsley.
  8. Once the mackerel is cooked, spoon the garlic lemon drizzle generously over the fillets and serve hot.

Notes

  • For added flavor, mix in a dash of smoked paprika to the garlic lemon drizzle.
  • If mackerel is unavailable, substitute with salmon or trout.
