- 4 mackerel fillets (approximately 6 ounces each)
- 1 tablespoon extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 1 lemon, for zest and juice
- 4 tablespoons unsalted butter
- 2 cloves garlic, finely chopped
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to broil and line a baking sheet with parchment paper.
- Arrange the mackerel fillets on the lined baking sheet, skin side down. Lightly coat with olive oil and season with sea salt and black pepper.
- Broil the mackerel for about 5-7 minutes, or until the fish is opaque and the skin is crispy.
- While the mackerel is broiling, melt the butter in a small saucepan over medium heat.
- Add the chopped garlic to the melted butter and sauté for about a minute.
- Incorporate the lemon juice and zest, stirring well, and let it simmer for another minute.
- Remove from heat and fold in the chopped parsley.
- Once the mackerel is cooked, spoon the garlic lemon drizzle generously over the fillets and serve hot.
Notes
- For added flavor, mix in a dash of smoked paprika to the garlic lemon drizzle.
- If mackerel is unavailable, substitute with salmon or trout.
