Ingredients

  • 2 pounds goat shanks
  • 4 cups bone broth
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Brown the goat shanks on all sides.
  3. Remove the shanks and set aside. In the same skillet, add onions, garlic, carrots, and celery. Sauté until softened.
  4. Add the goat shanks back to the skillet along with the bone broth, thyme, and rosemary.
  5. Cover and transfer to the oven. Braise for 3 hours until the meat is tender.
  6. Season with salt and pepper before serving.

Notes

  • For a richer flavor, let the dish sit overnight in the refrigerator and reheat before serving.
