- 2 pounds goat shanks
- 4 cups bone broth
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (163°C).
- In a large skillet, heat the olive oil over medium-high heat. Brown the goat shanks on all sides.
- Remove the shanks and set aside. In the same skillet, add onions, garlic, carrots, and celery. Sauté until softened.
- Add the goat shanks back to the skillet along with the bone broth, thyme, and rosemary.
- Cover and transfer to the oven. Braise for 3 hours until the meat is tender.
- Season with salt and pepper before serving.
Notes
- For a richer flavor, let the dish sit overnight in the refrigerator and reheat before serving.
- This dish pairs well with crusty bread or over mashed potatoes.
