  • 2 pounds beef tripe
  • 4 cups beef bone broth
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 bay leaves
  • 1 tablespoon soy sauce
  • 1 teaspoon black peppercorns
  • 1 tablespoon salt
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic; sauté until translucent.
  3. Add the beef tripe and brown on all sides.
  4. Pour in the bone broth and add the carrots, bay leaves, soy sauce, peppercorns, and salt.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Let it simmer for 3 to 4 hours, or until the tripe is tender.
  7. Remove bay leaves and serve hot.
