- 2 pounds beef tripe
- 4 cups beef bone broth
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 bay leaves
- 1 tablespoon soy sauce
- 1 teaspoon black peppercorns
- 1 tablespoon salt
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic; sauté until translucent.
- Add the beef tripe and brown on all sides.
- Pour in the bone broth and add the carrots, bay leaves, soy sauce, peppercorns, and salt.
- Bring to a boil, then reduce heat to low and cover.
- Let it simmer for 3 to 4 hours, or until the tripe is tender.
- Remove bay leaves and serve hot.

- Adjust seasoning according to your taste.
- For a richer flavor, cook longer.
