Delicious Italian doughnuts filled with a creamy custard.

Ingredients

  • 500 grams all-purpose flour
  • 100 grams sugar
  • 10 grams salt
  • 20 grams active dry yeast
  • 250 ml milk, warmed
  • 2 large eggs
  • 100 grams butter, softened
  • 300 ml pastry cream
  • oil for frying
  • powdered sugar for dusting

Instructions

  1. In a bowl, mix flour, sugar, salt, and yeast.
  2. Add warm milk and eggs, mix until a dough forms.
  3. Knead in softened butter until smooth.
  4. Let the dough rise for about 1 hour until doubled in size.
  5. Shape the dough into balls and let them rise for another 30 minutes.
  6. Heat oil in a deep fryer to 180°C (356°F).
  7. Fry the dough balls until golden brown, about 2-3 minutes each side.
  8. Remove from oil and place on paper towels.
  9. Once cooled, inject with pastry cream using a piping bag.
  10. Dust with powdered sugar before serving.

Notes

  • Make sure the oil temperature is stable to prevent soggy doughnuts.
  • For extra flavor, you can add vanilla to the pastry cream.
