- 1 pre-made tart shell
- 1 cup fresh blueberries
- 1 cup sugar
- 1/2 cup fresh lemon juice
- 3 large eggs
- 1/4 cup unsalted butter
- 1 tablespoon lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together sugar, lemon juice, and eggs until smooth.
- Place the mixture in a saucepan over medium heat and cook, stirring frequently, until thickened.
- Remove from heat and stir in butter and lemon zest.
- Pour the lemon curd into the pre-made tart shell.
- Chill in the refrigerator for at least 2 hours.
- Top with fresh blueberries before serving.
Notes
- For a sweeter tart, add more sugar to the lemon curd.
- Can be stored in the refrigerator for up to 3 days.
