- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set.
- While cookies cool, mix the cream cheese and powdered sugar until smooth and creamy.
- Once the cookies are completely cool, spread a layer of cheesecake mixture on top of each cookie.
Notes
- For a richer chocolate flavor, use dark cocoa powder.
- These cookies can be stored in an airtight container for up to a week.
- Chill the cookies in the refrigerator after adding the cheesecake topping for a firmer texture.
