  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup crushed Oreo cookies
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 1/2 cup Oreo cookie crumbs for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes.
  4. Stir in the boiling water until well combined. The batter will be thin.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes.
  6. Let the cakes cool in the pans for 10 minutes, then remove from the pans and cool completely on wire racks.
  7. For the frosting, beat softened butter until creamy. Gradually add powdered sugar and mix until well combined.
  8. Fold in crushed Oreo cookies.
  9. Once the cakes are completely cool, spread frosting between the layers and on top of the cake.
  10. Garnish with additional Oreo cookie crumbs.

Notes

  • For a more intense chocolate flavor, use dark cocoa powder.
  • This cake can be made a day in advance and stored in the refrigerator.
  • Feel free to adjust the sweetness of the frosting by adding more or less powdered sugar.
