- 1 can black beans, drained and rinsed
- 1 ripe avocado
- 1/2 cup cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a blender or food processor, combine black beans, avocado, cocoa powder, honey, coconut oil, eggs, vanilla, baking powder, and salt. Blend until smooth.
- Pour the batter into the prepared baking dish and sprinkle with chocolate chips if using.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before slicing into squares and serving.
Notes
- These brownies are best stored in an airtight container in the fridge.
- For a vegan option, substitute eggs with flax eggs.
