Delicious and fudgy brownies made with black beans and avocado, perfect for a healthy dessert.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 ripe avocado
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a blender or food processor, combine black beans, avocado, cocoa powder, honey, coconut oil, eggs, vanilla, baking powder, and salt. Blend until smooth.
  3. Pour the batter into the prepared baking dish and sprinkle with chocolate chips if using.
  4. Bake for 20-25 minutes or until a toothpick comes out clean.
  5. Allow to cool before slicing into squares and serving.

Notes

  • These brownies are best stored in an airtight container in the fridge.
