- 2 cups mixed dried fruit
- 1 cup chopped nuts
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 cup butter
- 1 cup sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup orange juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix together the dried fruit, nuts, spices, and flour.
- In another bowl, cream the butter and sugar, then add eggs one at a time.
- Combine the fruit mixture with the butter mixture, then add orange juice and mix well.
- Pour the batter into a greased cake pan and bake for 1 hour.
- Let it cool before serving.
Notes
- For a richer flavor, you can soak the dried fruits in rum overnight.
- This fruit cake can be made weeks in advance and wrapped tightly for best preservation.
