Instructions
- Grate the potatoes and onion into a large bowl.
- Add the eggs, flour, and salt, and mix until combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the pan and flatten slightly.
- Fry until golden brown on both sides.
- Transfer to a paper towel to drain excess oil.
- Serve hot with sour cream or applesauce.
Notes
- For a crispier texture, use starchy potatoes.
- Make sure not to add too much flour.
- These pancakes can be frozen and reheated in the oven.
