Delicious and crispy potato pancakes, also known as draniki, are a traditional Belarusian dish.

Ingredients

  • 1 onion
  • 2 eggs
  • 100 g flour
  • 1 tsp salt
  • vegetable oil for frying

Instructions

  1. Grate the potatoes and onion into a large bowl.
  2. Add the eggs, flour, and salt, and mix until combined.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the pan and flatten slightly.
  5. Fry until golden brown on both sides.
  6. Transfer to a paper towel to drain excess oil.
  7. Serve hot with sour cream or applesauce.
