- 1 seven-bone roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup beef broth

- 2 carrots, chopped

Instructions
- Preheat the oven to 300°F (150°C).
- Season the roast with olive oil, salt, and pepper.
- In a large skillet, sear the roast on all sides over medium-high heat.
- Transfer the roast to a roasting pan and add the beef broth, garlic, onion, carrots, and celery.
- Cover the pan with foil and roast in the oven for 3-4 hours, until the meat is tender.
- Let the roast rest before slicing and serving.
