Instructions

  1. Preheat your smoker to 225°F.
  2. Trim excess fat from the beef deckle.
  3. Season the beef with salt, black pepper, paprika, and brown sugar.
  4. Place the beef in the smoker and smoke for 4-5 hours until it reaches an internal temperature of 190°F.
  5. Remove from the smoker and let it rest for 30 minutes.

  7. Smoke again for an additional hour.
