This delicious Banana Upside Down Cake features caramelized bananas on top of a moist and fluffy cake.

Ingredients

  • 3 ripe bananas
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, melt butter over medium heat, then add brown sugar and stir until dissolved.
  3. Arrange sliced bananas in the bottom of a greased cake pan and pour the caramel mixture over them.
  4. In a bowl, mix flour, sugar, baking powder, and salt.
  5. Add milk and eggs to dry ingredients, mixing until smooth.
  6. Pour batter over the caramelized bananas in the pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let it cool for 10 minutes, then invert onto a plate and serve.

Notes

  • For extra flavor, add a teaspoon of vanilla extract to the batter.
  • This cake is best served warm with a scoop of vanilla ice cream.
