- 1 block feta cheese
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes
- 4 large eggs
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In an oven-safe skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
- Stir in the crushed tomatoes, smoked paprika, cumin, and red pepper flakes. Simmer for about 10 minutes.
- Make small wells in the sauce and gently place the feta cheese in the center.
- Crack the eggs into the wells, season with salt and pepper.
- Bake in the preheated oven for 15-20 minutes or until the eggs are set to your liking.
- Garnish with fresh parsley before serving.
