A vibrant and flavorful baked feta shakshuka recipe with poached eggs in a spiced tomato sauce.

Ingredients

  • 1 block feta cheese
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes
  • 4 large eggs
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
  3. Stir in the crushed tomatoes, smoked paprika, cumin, and red pepper flakes. Simmer for about 10 minutes.
  4. Make small wells in the sauce and gently place the feta cheese in the center.
  5. Crack the eggs into the wells, season with salt and pepper.
  6. Bake in the preheated oven for 15-20 minutes or until the eggs are set to your liking.
  7. Garnish with fresh parsley before serving.
