Ingredients

- 2 cups almond milk
- 1 cup brewed coffee
- 1/4 cup sugar
- 2 tablespoons gelatin powder
- 1 teaspoon vanilla extract
Instructions
- In a small bowl, dissolve the gelatin powder in cold water and let it sit for 5 minutes.
- In a saucepan, combine almond milk, brewed coffee, and sugar. Heat over medium heat until sugar is dissolved.
- Remove from heat and stir in dissolved gelatin and vanilla extract until well combined.
- Pour the mixture into a mold and refrigerate for at least 4 hours or until set.
- Once set, slice and serve chilled.
Notes
- Can be served with whipped cream on top.
- Adjust sugar to taste based on your preference.
