Delicious almond croissant blondies that blend the rich flavors of almond and buttery croissants.

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped almonds
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, combine almond flour, all-purpose flour, and salt.
  3. In another bowl, mix melted butter, brown sugar, eggs, vanilla extract, and almond extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir until combined.
  5. Fold in chopped almonds and white chocolate chips.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Let cool before cutting into squares.

Notes

  • For a richer flavor, add more almond extract.
  • These blondies are best served warm with a scoop of vanilla ice cream.
