- 2 medium eggplants
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the air fryer to 380°F (190°C).
- Slice the eggplants into 1-inch thick steaks.
- In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Brush the mixture onto both sides of the eggplant steaks.
- Place the eggplant steaks in the air fryer basket in a single layer.
- Air fry for 12-15 minutes, flipping halfway through, until golden and tender.
- Sprinkle Parmesan cheese on top and air fry for an additional 2 minutes.
- Remove and serve warm.
Notes
- For extra flavor, marinate the eggplant in the oil mixture for 30 minutes before cooking.
