Deliciously crispy and perfectly seasoned, these air fryer eggplant steaks make for a fantastic low-carb and keto-friendly dish.

Ingredients

  • 2 medium eggplants
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the air fryer to 380°F (190°C).
  2. Slice the eggplants into 1-inch thick steaks.
  3. In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Brush the mixture onto both sides of the eggplant steaks.
  5. Place the eggplant steaks in the air fryer basket in a single layer.
  6. Air fry for 12-15 minutes, flipping halfway through, until golden and tender.
  7. Sprinkle Parmesan cheese on top and air fry for an additional 2 minutes.
  8. Remove and serve warm.

Notes

  • For extra flavor, marinate the eggplant in the oil mixture for 30 minutes before cooking.
