- 1 large egg
- 1 tablespoon unsweetened applesauce
- 1 tablespoon shredded carrots
- 1 tablespoon chopped walnuts (optional)
Instructions
- In a microwave-safe mug, mix the almond flour, coconut flour, erythritol, baking powder, cinnamon, and nutmeg.
- Add the egg, applesauce, and shredded carrots to the dry ingredients and mix well until combined.
- If using, stir in the chopped walnuts.
- Microwave on high for about 1 minute, or until the cake has risen and is set.
- Allow to cool slightly before enjoying directly from the mug.

- This mug cake is best enjoyed immediately after cooking.
- Adjust sweetener according to personal preference.
- You can also add cream cheese frosting on top for extra flavor.
