Ingredients

  • 1 tablespoon unsweetened applesauce
  • 1 tablespoon shredded carrots
  • 1 tablespoon chopped walnuts (optional)

Instructions

  1. In a microwave-safe mug, mix the almond flour, coconut flour, erythritol, baking powder, cinnamon, and nutmeg.
  2. Add the egg, applesauce, and shredded carrots to the dry ingredients and mix well until combined.
  3. If using, stir in the chopped walnuts.
  4. Microwave on high for about 1 minute, or until the cake has risen and is set.
  5. Allow to cool slightly before enjoying directly from the mug.
