- 2 slices of whole grain bread
- 1 medium ripe tomato, sliced
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon fresh basil leaves, chopped (optional)
Instructions
- Toast the slices of whole grain bread until golden brown.
- In a small bowl, mix the mayonnaise and Dijon mustard until well combined.
- Spread the mayonnaise mixture evenly on one side of each slice of toasted bread.
- Layer the tomato slices on one slice of bread, slightly overlapping them.
- Sprinkle salt and freshly ground black pepper over the tomatoes to taste.
- If using, sprinkle the chopped basil leaves over the tomatoes.
- Top with the second slice of bread, mayonnaise side down, and press gently.
- Cut the sandwich in half and serve immediately.
Notes
- For added crunch, include a handful of arugula or spinach in the sandwich.
- Swap out the mayonnaise for avocado spread for a healthier fat option.
