A quick and easy recipe for a fresh tomato sandwich that can be made in just 3 minutes.

Ingredients

  • 2 slices of whole grain bread
  • 1 medium ripe tomato, sliced
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh basil leaves, chopped (optional)

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. In a small bowl, mix the mayonnaise and Dijon mustard until well combined.
  3. Spread the mayonnaise mixture evenly on one side of each slice of toasted bread.
  4. Layer the tomato slices on one slice of bread, slightly overlapping them.
  5. Sprinkle salt and freshly ground black pepper over the tomatoes to taste.
  6. If using, sprinkle the chopped basil leaves over the tomatoes.
  7. Top with the second slice of bread, mayonnaise side down, and press gently.
  8. Cut the sandwich in half and serve immediately.

Notes

  • For added crunch, include a handful of arugula or spinach in the sandwich.
  • Swap out the mayonnaise for avocado spread for a healthier fat option.
